I'm listening to the intro of Log Horizon right now because it is my personal favorite opener of all of the relatively few animes I've seen(at least compared to my friends and some othe rpeople I know).
It made me want to know what all your guys' favorites are.
Fairy Tails endings are way better than their OPs, but this one is really awesome. Though I never understood why Japanese songs switch from English to Japanese at random times.
A close second and third would be Baka and Test's OPs.
Sayonara Zetsubou Sensei. As in, the entire anime; the soundtrack is amazing. But the animation isn't done by SHAFT, so they don't get points for that.
(trust me, it actually makes a lot of sense if you've read the manga)
The best opening, however, is the last one; I found a video of it (and it was translated) but I couldn't find it again; oh well. But here's the actual music instead.
Pretty much anything from the Monogatari series but specifically the contrast between two of these openings for the same character as you delve deeper into her story. It's insane, making for one of the most amazing and memorable openings I've ever watched.

The three TWGOK op's are great within their own right to, the best english singing with lyrics matching the seasons content perfectly.
I don't think any of these are my true favorite though, if I can think of it I'll come back.

One Outs' OP is indescribable. Ignore the vocals at the beginning, once it gets going, it is gold.
My current favourite (I'm too lazy to list out my favourite opennings and I'm off to bed soon) is Kill La Kill 2nd opening (it's pretty sound epic to my ears!).
Speaking of which I'm can't find a decent opening video of it thanks to stupid Youtube copyright policy!

If we're talking just the song
I absolutely love pretty much all of Mami Kawada's songs, and this one's just my personal favourite.
But, if we're talking about the animation too, it becomes

Black Lagoon is high up for music, which sets the topne for the show perfectly.
Ditto Orgus 02, with a weird, alien vibe that sends chills up my spine, accompanied with some really beautiful and striking imagery that captures the shows ideas and aesthetics (giant robots turn up in a Victorian era world, and are salvaged and retrofitted with appropriate weaponry, and an antiwar message that's genuinely affecting and heart-wrenching rather than 'war is bad, 'mkay' yet without being too bleak, and tying into the original series in a wonderful way that still lets the show make sense if you haven't seen it)
I may have mixed feelings on the Anime itself, (much preferring the manga) both openings for Magic Knight Rayearth are pretty lovely, and the visuals sum up all the good stuff about the anime. I prefer the first, but the 2nd has a great beatles-esque sound to it. Good soundtrack all-round for the show, very eclectic.
And if I may cheat (and honestly, no trolling here), Robotech. Whatever you thuink of the show or what harmony gold has done, this is a very majestic theme tune
Rurouni Kenshin had some very interesting opening.
Seeing as how it is an action series (more or less), the opening makes sense. Having a heavy guitar riff to start as we see some bad ass swordsmen in the back ground. And then, it pulls the rug out from under you and takes a completely different tone. Seeming much more happy and carefree.
And it works. It works because it is Kenshin. An amazing swordsmen who's skills are second to none trying his best to find his place and live somewhat normally. That's actually why I enjoy this opening.
Still not what you expect from the series, yet I do like it, too.
Oh, and someone mentioned Outlaw Star. Outlaw Star should always get more love.

There is just so much to love about this intro. Vash being bad ass, the music, the imagery. This is how you start an episode.
The DBZ Theme, Rock the Dragon, can't be left off any of these lists. It's iconic. It's awesome. It makes me want to watch the show right now. I actually wish this was used on Toonami to start the show. Yeah, I do love this theme.
