Mine is the spartan from DOA4, only because people would get pissed if they lost to me and it was funny to hear it.

My personal favorite is Raphael from the Soul Caliber games. I like Fulgore and Jago from the KI games too.
The fast one.
Doesn't matter what the game is, if there's a light fast character that's generally who I'll take, because they're great for being disruptive and annoying. Ling Xiaoyu, Talim, Xianghua, Sakura, etc.
The exception is Dead or Alive, where I play power characters and grapplers (Nicole, Hitomi, Tina, etc. I even used to be pretty dangerous with Bass)

Usually, I go for the characters that have a balance of speed and strength, yet have a somewhat unconventional fighting style. Although sometimes I'll go for the slower, defensive types.
Street Fighter: Sagat, or as I like to call him, Captain Tiger. TIGER SHOT! TIGER UPPERCUT! TIGER KNEE! TIGER RAID! TIGER GENOCIDE! Other favourites: Ryu, M.Bison, Fei Long
Soul Calibur: Cervantes - His swords have a short range, but his moves more than make up for it, especially his Psycho Crusher-style attack. Other favourites: Siegfried, Raphael, Sophitia
Smash Bros: Captain Falcon - His mobility makes up for his slow attacks, and a well-placed Falcon Knee is almost as satisfying to land as Akuma's Raging Demon.
Other favourites: Fox, Donkey Kong, Ganondorf
Mortal Kombat: Sub Zero - Freezing people is awesome, especially if it's done with an Ice Clone (MK3) to punish them for jumping at you. Other favourites: Liu Kang, Shao Kahn

I don't play a lot of fighting games really. I did use to have the original mortal kombat, and come on, how could you not like the ninjas? Scorpions fatality was using fire breathe to burn your opponent to a skeleton, and sub-zeros was to rip off your opponents head, with their spine still attached. I also liked rayden, because I like electric attacks, and he is evil. and, being evil he got the best ending, i.e. starting immortal kombat with all the gods, some matches lasting years, eventually destroying humanity and the earth. then there is dead or alive 1. and, besides the girl characters (every straight mans favorites) I like... actually I don't remember their names. I just know one was a ninja, and the other this martial artist, who would do this cool wolf howl whenever he won. and, now realising all the characters I have said are oriental, I did also like the guy with what I'm pretty sure is a beret. because he is a hitman.
Soul Calibur 2/3: Urgh, too many! Kilik, Raphael Astaroth's throw set was great fun if you could get it right, and there was nothing cooler in SC3 than Zasalamel (I'm a sucker for the scythe).
Tekken 5: Hwoarang, Raven, Kazuya. Oh, and Devil Jin.
