favorite cheese?

im bored and felt like making a thread and all i can think about is cheese, so whats your favorite? for me its boursin, its wonderful spreadable and goes great with just about anything. (i get a roast-beef and boursin every-so often at my local deli.)

Mozzarella is good, but Monteret Jack is the cheese of god.

A nice smoked Gouda, it is freaking delicious. I am also partial to a nice Pepper Jack, or Horseradish Cheddar.
