I like cheese with peppers in it, so it's pepper jack. Although I did have a smokes chipotle cheese that I found at Winco, the stuff tasted kind of like bacon which made it fucking delicious.

It varies immensely. If I am just going to sit around eating cheese, probably a smoked Gouda. But I love most non-moldy cheeses.
