Carol of the Bells is my favorite, too. And you are the first person I've ever found that seems to enjoy it as much as I do, especially George Winston's amazing version! You might also check out the Trans-Siberian Orchestra's version if you want an epic version, and the Bird and the Bee offer a very "alternative" version. Theirs is sort of like if Arcade Fire did the Carol of the Bells.
But apart from my near obsession with that song, I like Do You Hear What I Hear performed by Vanessa Williams, and the little drummer boy performed by...well anyone, really. Gospel choirs, mostly. Here is that version of Do You Hear What I Hear:
