Elves in most fantasy themed game, for simple reason that in fantasy they usually portrayed as a "better" then us mere humans (right now all i can think off is Arcanum and Dragon Ages as main games that didn't portray them that way).
That they are stereotypically masters of ranged combat and ambushes only makes the satisfaction of thwarting their elven tricks even better.

On topic. I hate myself for it but zombies, there are usually loads of them so you can just spray your gun or go wild with a melee weapon.
They are squishy and fall down pretty fast.

Robots, Necromorphs & Zombies shooting parts of them and have them still attack you is so fun, and the blown off parts fly everywhere.
Eg in Binary Domain, shoot a robot's gun arm off and it will pick up the gun with the other arm, shoot the head off and it will attack it's foes
Imo these type of enemies work best for bulletspunges compared to humans and aliens that you just shoot until they keel over.
Also +1 for Space Marine 40k, shooting and slicing through greenskins is highly satisfying.

Since my favourite TV show is Dexter, I can't help but going out of my way to kill killers in open world games like GTA or Skyrim.
Anything that evenly matches up to my character in combat. Those fights are always the most intense.
Anyone who plays as Teemo I now consider to be less than a human being. Lol has a lot of annoying champs but Teemo is the only one to consistently give me aneurisms. Thing is, Teemo isn't actually that good... He's just annoying as fuck. Late game if you step on a shroom, anywhere on the map he'll come running out of the nearest bush and instakill you with his bullshit attack speed without fail.
I love Teemos who think they're safe in their invisible state when our team saw him enter it. Cue massive AOE storms around his general location. Free kill goes to Anivia!
Oh and now that I think about it... I love beating a Yorick. Every other time I go top someone picks him and he has such easy mode harass and pushing potential. He's not even in Nidalee territory where she has mega poke but won't win a proper fight most of the time. He has bullshit poke and can just straight up kill you.

Killing a krogan while he's charging at you in Mass Effect 1 is pretty fun. Every time it happens I think to myself, "Kneel before me hah hah" in Ross Scott's voice.
Killing the British in Assassin's Creed 3 will be fun simply because people are throwing a fit about Connor taking sides and I couldn't care less about who I get to stab. As long as the stabbing gets done.
Also, Stormtroopers. It doesn't matter what Star Wars game it is, killing Stormtroopers is always fun.
