FFVII music was legendary, it was truly epic. especially the world map music.
mass effect had perfect music, it really fits the sci-fi mood. Galaxy map tune anyone?

Smackdown Vs Raw! The first one, had a fantastic soundtrack. Burnout 3 had some good songs aswell. The Tony Hawks series will consistently have a good soundtrack. I enjoyed the one off of DMC4 aswell.
Final Fantasy VII. Not my favourite FF, but I still remember most of the music. The post-battle music (during the experience and items gained screen) is especially awesome.
Star Wars. I'm playing KotOR right now and this music (and the music in most Star Wars games) is really good and helps set the mood.
Warcraft II. I loved the music in this game.
Zeus: Master of Olympus. I only played this game for the music.

Carmagedon 2 - It had some nice metal songs, really getiing you in the mood for killing innocent bystanders for fun.
Unreal Tournament and 2004, and 3 - All have some exellent music, and some of the only ones i listen to outside games.
Sauerbraten - No one of you probably heard of the game, and open source fps. The game is pretty good, but the music itself is even better.
Defcon - Hands down my favorite game soundtrack. Its just amizingly wellmade, and really draws you in.
Age of Empires and 2 - Loved those midi vibes.
Red alert - Hellmarch takes the 2nd place for me.
Portal - Sure the end credit song was good, but for me, its the ambient music during the stages, that takes the cake.
Stronghold Crusader - Had some nice background music too, if slightly understated.

Might & magic 6,7 and 8 (9 sucks)
Morrowwind is really atmospheric
Beyond good & evil has good battle music

Guild wars! That stuff is brilliant (that composer makes music for more games actually)

Heroes of might & magic series, I like how they also have voices in their songs
