It's hard to choose just one.
UFO and Sword are probably the two I enjoy using the most in a general sense. Double Stone and the Electro-Cutter double-bladed sword in Kirby 64 were awesome, and Fire in Return to Dreamland is a very solid all-purpose ability as well.

My favorite Kirby power is the power to eat things and take their powers. And the sword power.

That's a tough one. Personally I've always loved Bomb and Beam for my powers. Fell in love with Water in Return to Dreamland. I've not played Triple Deluxe yet, plan on getting it today, so I don't know what new powers are in it because I wanted it to be a surprise. I really love Kirby games, and I'm glad more Kirby games are out after the large lack of them for a while.
Fighter, without a doubt. It's just so satisfying to kick the crap out of everything I see on the screen. The move-set is diverse and fun to experiment with. Slashing stuff is also fun, especially as Link, so Sword is my second favorite.

The more common power for me will be, sword, fighting, flame (the one where you literally turn into flame), and nuke.

Fighter, mostly for the wonderful sounds that the rapid-fire punch, Hadouken and Shoryuken make. Ninja is good too, but I was never able to reliably perform some of its more complex techniques.

Since my main exposure to Kirby in the early days was in Air Ride, all the powers I like have to do with how much they helped me knock opponents to the side. The blade's pretty high on my list, since every time you got close to somebody you could always match their speed and wail on them until their vehicle exploded! Then they would just give you a look like, "You're going to be that guy?"

But the best power-up in any race was the tornado!

The best part was, if somebody else got it, they weren't nearly as good as me at spinning. It was probably a habit that had trickled down from my destructive tendencies in F-Zero GX.

Mirror Kirby from all stars is my favorite power. The mirror dash attack where you split into two kirbys is alwasy nice and the shield was amazing.
Second would be UFO just for the fun of floating around shooting lazerbeams at enemies without a care in the world.
With that said, a lot of combo powers in Kirby 64 were amazing and I wish they would do something similar to that again. Nothing like double bladed laser sword and using the dynamite and ducking under your little hard hat and simple watching everything explode.

Gotta go with sword, it's satisfying and fun to use. However, the best wquld be the fire and electric cutter combo swords in Kirby 64. The fire one is a big flaming broadsword that is awesome by default, and the electric one makes you Darth Kirby!

I have not enjoyed the Circus power.
The bells are relatively serviceable, but not terribly great.
The addition of sword-beams at full health and a spin attack on sword is a cute reference.
The Archer power is a big improvement over the one in Amazing Mirror.
I like pretending I'm Hawkeye whenever I do the dash attack with the Archer powerup. Same with the triple shot. XDSouplex said:
Personally, I enjoy the Circus powerup, and thought I wasn't but I managed to beat the second boss easily with it.
Bell I'm just being plain silly with when using that one, and what can I say, I enjoy messing around with the bells.
Spear I was never a big fan of, but that's probably because I never really use spear that much.
Well I'm off to record gameplay of it with my 3DS capture card. Gotta meet the quota for Game Anyone when it comes to the game, and I finally managed to set everything up correctly.
After helping my little cousin with Paintra, I love the new Spear ability just for its functionality.
And speaking of Paintra, that's the second Kirby boss that actually nearly made me honestly lose a life to.
