I'd have to say Sovngarde Song - I'm not really into TES, and didn't buy/play Skyrim, but I love the tone and build of the song.
Shadows in the Moonlight (Assassin's Creed). Brothers of the Creed wasn't bad, but it seemed to be much more specific.
Legends of the Frost featuring Malukah (I especially adored the segment where he sung in the dragon language).
My all-time favorite is the Sovngarde Song. I -was- going to say "Pretty much all of his Skyrim stuff", but Khajiit like to Sneak kind of ruined that.

Crucible is AMAZING, I wish he would release an extended cut though.

Sovngarde Song used to be my favorite, Then I took a Sweet L.A. to the eaugh... I mean Sweet L.A. is my favorite. I'm sorry for my outburst.

*Sigh* I hate choosing favourites I've never like it, to this day I still don't know what my favourite colour is, and that's a question they start asking you since you start developing a brain.
If I had to choose, I guess I do like Sweet L.A. a lot and it's normally the song I play when there are people around, Mind of the Bat is really catchy and was also the first MoS song I heard, I was really surprised because it didn't suck, and then I started listening to his other stuff, the other song I find myself humming quite often is a song called Amnesia that I found in an old abandoned Myspace [http://www.myspace.com/lotuslullaby] page of his old band, just because I want to be hipster like that, though it's probably got something to do with what that song means to me, since I hear more stuff than just that song when I listen to it, I guess it's because of what was going on in my life when I found it, kinda makes me want to cry actually...

Joker's Song or Redemption Blues. They're the only ones that made me want to go back and play the game again, and like other people have said, they capture the themes of their respective games perfectly.
