Mega Man 2 is a great choice.

I would have to say that, SMB3, Castlevania 2, or Bionic Commando: you get to watch Hitlers face 'splode).

Battle Toads and Contra: the two games that I own and have never finished. Without cheating, of course.

It's hard to say "just one".

Blaster Master "did it" for me for a long while, then "Solar Jetman" was an equal.

there are other good ones I could mention but I always come back to those two.

The first two that popped into my head besides the generic Mario or Duck Hunt would have to be --

Maniac Mansion

and

California Games

Come on now, nothing like putting a hamster in a microwave and then blowing out the cartridge for California Games to beat your friend in Hacky Sack, or "Foot Bag" as they called it.

Aw, Hell Yeah.

Also Super Mario 3 (even saw The Wizard in theaters to get a look at it).
Blaster Master was also good, with Mega Man 2 taking up the rear.

Heck, yeah- the music in that game was awesome. Unfortunately, the controls really sucked. It took me forever to get the hang of pogo-jumping. (In fact, I think most of the Disney Afternoon type games suffered from control issues.)

My pick would have to be a toss-up between 1943 and Silkworm- both were incredibly difficult, unforgiving games, but the controls were intuitive and responsive, the music was great, the graphics were quite good for the period and they were just plain fun.
