The India Pattern Flintlock.
It may not fire quickly (1 shot/15 seconds), but I love that gun. Plus, who is going to get back up after being hit with a .75 caliber round?

Goldeneye Rocket Launcher. May not have laser sighting like the one in HL2, but it reloads as fast as any other weapon.
I know its horribly generic but it would have the be a pump action, pistol grip, combat shotgun.
I love how dangerous it is to use in games and in real life you couldn't ask for much more in a Zombie breakout... ok, hardly real life but you get what I mean right? I spend far too much time planning my survival in the Zombie Apocolypse.
Fictional: Gluon Gun from HL 1. Not sure if it counts as a projectile though. If not, the Tau Cannon also from HL 1.
Fantasy: Griffin Longbow (M&M VII)

Real: The Webley Double Action Revolver (Oddly it's the gun you use in Bioshock, but it was my favorite gun before that)
"Reality": Flame thrower, Mini-gun, Sniper rifle, shotgun, Wait... I'm just listing the weapons of Team Fortress 2. MGS1's Nikita was excellent (still waiting, Hideo) though the Railgun was good as well.

(non projectile: Lightsaber, Chainsaw, Nuncucks... aaawww yeah!)
As for rifle's like AK47, M4, Garand, they are too damn similar though if anything i'd say i love iron sights.

just for the *hack* of it, a double sided battle axe, if it was flying at you you would be scared senseless
