Depends on the class and the given situation. But the ones I stick to most are:

Scattergun
Pretty Boy's Pocket Pistol
Candy Cane

The Original
Righteous Bison
Frying Pan

Degreaser
Flaregun
Axetinguisher

Grenade Launcher
Sticky Launcher
Ullapool Caber

Iron Curtain
Sandvich
Killing Gloves of Boxing

Widowmaker
Lugermorph
Gunslinger

Blutsauger
Medi-gun
Ubersaw

AWPerhand
SMG
Tribalman's Shiv

Enforcer
Black Rose
Enthusiast's Timepiece
Sapper

I play mostly old-school loadouts, with minor variations or reskins.

If I had to pick one of those nine, it would probably be the Snipers.

Engineer, Spy, and Scout are my favorite classes, but I pretty much never change that Sniper loadout. It works for just about every situation.

My Pyro loadout:

Degreaser
Flare Gun
Axtinguisher

Great for setting people alight with the Degreaser and getting crits on them by either airblasting them back and shooting them with a flare, or just axing their ass. I don't think I can really use other flamethrowers any more, though. I'm way too used to the lightning-fast weapon switch time.

Also, I have the Pyro wear the Area 451 hat (mask? helmet?) for extra intimidation factor. His alien head wobbles about something fierce!
My kind of Pyro! I use:

Degreaser
Reserve Shooter
Axtinguisher/Mailbox

Basically a melee ambush class - Burn and slash, burn and slash, burn and slash. If they're just out of slashin' range, air blast and get the bonus from the Reserve Shooter, which is out like that.

I don't play Sniper much anymore, but I'm a big fan of:

Jarate
Bushwacka

Something about abilities that can activate crit just works for me. People seem to get used to a general level of damage, so when the damage output spikes they don't know what to do.

On Spy:

Eternal Reward
Familiar Fez
L'Trangre (or whatever the stupid thing's called)
Dead Ringer

There's nothing that throws people off like a silent dead ringer. Literally "silent but deadly."
Good 'ole Fez Spy. Endlessly fun.

Until half the opposing team goes Pyro, of course.

I have a few favorite loadouts

Scout:
Force A Nature
Bonk/Mad Milk (offense/defense)
Atomizer

This is a quad-jump kit that I love to death. Scout is my main class and I love being fast, so having this extra maneuvrability gets me pumped whenever I play as a scooty booty man. It makes it really easy to knock ppl into pits or off cliffs, and can knock ppl away that you don't want too close to you (like pyros or a heavy whos rdy for u). On offense or in arena ill use the bonk atomic punch to distract sentries so my team can more easily kill them. On defense I use mad milk to help my team stay alive while assault the payload cart or ppl on a capture point. Plus I can extinguish teammates and get extra points.

Pyro:
Degreaser
Reserve Shoooter
Axtinguisher/Homewrecker (Offense/Defense)

This is a powerful burst damage kit, the reserve shooter is especially useful for killing other pyros and hop-happy scouts. Just airblast then pop them for insane damage. Then if I come across something a bit stronger I have my axtinguisher. On defense if we have an engineer I will use the homewrecker to help him defend his stuff. A pyro with a homewrecker can keep a sentry alive for a very long time if he is attentive. When situations come where a pyro isn't good (like on the last choke point just before the decline on Badwater) I can sit and defend the sentry nests; spychecking, reflecting projectiles, pushing away ubers and desapping items.

Sniper:
Machina
Cleaner's Carbine (you need an smg since the machina can't no-scope)
Tribalman's Shiv

I know a lot of ppl don't like the Machina, but I love getting two kills with one shot. Then if I get a carbine kill I can chain them together for a stream of crit kills, but even if there is nobody in range a kill from the Carbine gives my machina instant 150 damage to a body shot with a quick scope. Or a crit melee to a heavy with the tribalmans shiv will not only do massive damage but cause massive bleed as well.

My favourite loadout is for the soldier, my favourite class.

The Original, clears up other half of the screen with centered aiming, and I don't get the whole "Can't corner shot", I find it super easy anyways.
Gunboats, cause I usually kill shit by blowing my own feet, and I rocket jump, a lot.
And a escape plan for melee to get away when in deep.

Might as well post favourite demo loadout.

Loose Cannon, cause you can push people around, cook the bomb so it explodes earlier...and the pure satisfaction of squishing scouts with the ball.

regular stickylauncher for all my spamming needs and blowing shit up.

And the ullapool caber for 2 reasons.
1. I named it 1.st Scottish Kamikaze Regiment
2. As mentioned above, it is just hilarious to smash someones face in when they think they got you. "I AIN'T GOING OUT ALONE!"

Just for grins...my current favorite loadout for Spy:

Enforcer
Sapper
Conniver's Kunai
Dead Ringer

Or as I like to call it, my "Robot Killer" setup. I've actually come to really enjoy using the Spy in MvM, and having a self-healing knife lets me save money for those all-important "giant stabber" upgrades.

That's when I chalk it up to a success and switch back to C&D for the mindgame lulz. They'll never see me coming, and more important, they'll never look. ^_^

They're designed to sync well...which is why I like to buck tradition and go Jarate/Tribalman's Shiv. Nothing quite like sneaking up to someone, slashing open a vein, applying broken glass and piss, and laughing while they die from minicrit bleeding damage.

My favorite loadout, in so far as having fun, is a Sniper with the Sydney Sleeper, SMG/Cleaner's Carbine, and the Tribalman's Shiv.

Yes, I can't deal headshots or protect myself from them, but nothing messes people up like a surprise Jarate dart followed by the secondary piling on minicrits...or bleeding, for that matter.

Also, it allows me to reach out and demoralize someone from across the map. Suddenly, someone who thought they were winning is now on the losing side of an equation. It might not net me a lot of kills in the end, but damned if it isn't just plain fun to wander onto strange parts of the map, idly plink at the other team, and not feel guilty about not getting a headshot.
Honestly, I feel like Sydney Sleeper sniper is the way that sniper should be played. It's a much more team oriented class in a team oriented game. Normally the sniper is kind of a selfish class. He stays out of harm's way, tends not to go anywhere near objectives, and doesn't even take a shot unless he thinks he can hit a head shot. That kind of play style really sucks for team based play. A sydney sleeper sniper goes for every shot because body shots are easy to hit, therefore ultimately dealing more overall damage to the enemy team, even if it doesn't necessarily net more kills, not to mention causing his targets to take mini-crit damage, which usually forces them to back off of objectives, and helps the rest of his team get kills. It's a much better class for team play, even if "real" sniper players think it's noobish.

It's funny you mention that, actually; I was led to understand that several competitive teams, for whom efficiency is a plus, were being slaughtered not too long ago by another team who had one of their utilities switching over to a Sydney Sleeper Sniper and effectively crippling the damage-soaking ability of their power classes. Suddenly 200 health doesn't seem like a cornerstone of durability when it's knocked down to an effective 148 after mini-crits (and whatever damage the shot did, but since I always assume a soldier comes with at least partial overheal, it balances out). Sure, the medic can heal it off, but if he so much as sticks a foot out, he can be the next to wind up with a piss dart lodged in him, which I think is the real strength of the Sleeper; it can ruin someone's day no matter where it hits them, and can stall a push at ranges that are much more survivable for the Sniper than Jarate.

Back when I played TF2 a massive amount I was that absolute dickhead who refused to die because lol Dead Ringer forever. Dead Ringer, Ambassador and classic knife. Does everyone still use that ice knife that turns people into obvious statues but had... Some really good perk associated with it so loads of Spys thought it was worth the drop in stealth, I stopped when that first came out.

I sort of had to main Spy and Heavy because those are the only classes where having REALLY shit FPS isn't gamebreaking.

Just try and play Scout on 15 FPS. TRY!

I was invisible and undying simply because I was waiting for the FPS drops to stop. Oh and simply looking at an Engie Nest caused my game to become a Powerpoint Presentation until I managed to tear my eyes away. Literally the only Spy who approaches every nest with his back turned to it and trys to sap it without really looking at it.

I'm reinstalling it now because my new PC will be a constant 60 at least.

Oh yeah, tons of people still use that knife, since it allows you to dead ringer away from Pyros really easily, and is usually worth the lack of stealth if there are a bunch of pyros on a team.

Then again, I'm terrible and spy and terrible at stealth. My idea of spy is to use the Enforcer, and shoot at people until they start shooting me back, then cloak and run away like a little girl, serving as a constant distraction.

I just love the Loch-n-Load Demoknight. Loch-n-Load, Splendid Screen, Eyelander. Not very good, but utterly fun.

The Baby-Face Blaster, Crit-a-cola and Holy Mackerel are ridiculously fun for the Scoot for some reason.

This last one I use very, very rarely, because I honestly feel it makes the game way worse for everyone on the other team, but if I'm feeling very, very dickish I'll go Pomson, Pistol and Gunslinger for the Engy. And then feel bad about it for about a week. Really, the Pomson and the Gunslinger should both be nerfed way down.

Medic
Blutsauger
Kritzkreig (if defending)/regular medic gun (if attacking)
Ubersaw

I go this build and as long as at least 1 competent person is on my team that can understand how ubers work we sail to victory because nobody dies.

I just really like mailman-ing as a pyro. When I'm with my friends I always shout something stupid as I hit them after lighting them up, like "MAIL'S HERE", "I HAVE A PACKAGE FOR YOU, SIR"

I also like Dead Ringering, just to see how many times I can do it in one life. Also, when I team up with a friend also using it we become Super Spy Bro Team Saviour of the Universe.

I use this load out, for similar reasons. With some MVM and robotic boogaloo misc items.

My general tactic is to set them alight with the Degreaser and then hit them with the axe, but if it's someone who can get away (see scout or spy) I just flare them and get a ranged crit.

If I see a heavy on the map I just flare him a few times at range.

I should rename mine "The Instant Messenger" and change it's description to "You've got mail!"
