One of my definite faves that hasn't been listed is Weeds. Each episode has a different artist do the theme so it's kind of hard to only post one link, but here's the original from season 1 ep1.

This is only about half of what was in my panel; I can't remember the other 15 or so that I put in, but the winner is definitely either Bebop or Baccano! The styles are so close, and both are so masterfully done that it's hard to decide.

Showing my age, I'm afraid... For opening songs not much beats M*A*S*H's accoustic "Suicide is Painless", or Cheers' "Where Everybody Knows Your Name", for me. Also really like the old Night Court opening... but mostly because I just loved that show.
