Baneblade from Dawn of War: Winter Assault and the subsequent expansions. Eleven guns of hell. Quite simply the biggest thing you're going to see on screen, destroying entire squads with it's opening barrage. I scoff at your weedy predators and fire prisms, mock your destroyers and hammerheads. Your end is at hand.
Okay, so maybe it's not that powerful. Still pretty cool though.
The Scavanger from UT3. I know the game sucked hard but that vehicle was so much fun with its little legs and bouncing all over the place like a coke fuelled tennis ball.
The Mongoose from Halo 3. It's got no guns and no protection whatsoever. It's difficult to kill people by hitting them with it, and it's difficult for a passenger to get a good shot with any weapon while riding it.
But dammit that thing is fun to drive.
Also the tank from Resistance: Fall of Man. Nothing like annihilating Chimera while they try in vain to even dent the thing.
I probably have to say the Warthog, ruined as the Halo series has become in my mind thanks to all those annoying little kids, the warthot has earned its recognition as the amazingly fun and cool vehicle it is. Besides that, I think I'll say the golf cart in Battlefield: Bad Company. That was fun. Also, the Apache in the same game. Apaches are fun. Also Super Cobras in Battlefield 2.
