The Panzercycle from Mercenaries 2. A motorcycle frame mounted on a tank tread with two miniguns.
The TIE Inteceptor in Xwing vs TIE Fighter. It had no shields, but it was really fast with good firepower. I could take out more Xwings in that ship than anything in that game. Plus the TIE fighters were fun to fly.
Besides "any of the open-wheel race cars in Gran Turismo 3", I'll throw a few unorthodox vehicles in there:
- The 350 barrel-weight capacity crayer (from a fully-developed shipyard) in Patrician 3
- The Dry Bomber in Mario Kart DS
- Airships in the Final Fantasy series
- The Boeing 777-300 in Airline Tycoon
- The Grumman F4F Wildcat in any WW2 game that includes Pacific theater air combat.

The Ion frigate from Homeworld 1 and cataclysm.
I really like the look of that ship. It was somewhat iconic for the Homeworld series.
This does not include Homeworld 2 where the ion, flak, and missile frigates all looked the same, which is to say like crap, and the differences are only apparent when you zoom up close.

The Warthog in all 3 Halo games. I spent untold hours just bombing over Halo terrain in the thing for the sheer joy of driving it, even in single-player; killing helpless li'l Grunts with a controlled fishtail never, ever gets old.
The Scorpion from the Halo series comes in a close second; not so much fun to drive, but it slakes the firepower thirst oh-so-well.

Shadow from Twisted Metal 2. It is a hearse that shoots stuff. Also I prefer the TM2 Shadow since he fires a shadow that passes through things and then explodes. I find it really awesome.
Sweet Tooth from All The Twisted Metals. It's a deadly Ice Cream Truck. Need I say more? Oh and its driven by a killer clown!
