For me, it's got to be this one:
First off the song is just so infectious to me. This very energetic, optimistic song, coupled with some rather contrary imagery. People laughing as if they are joyful, but placed in situations of desperation or destruction. It really helped me to get the kind of mood the show was going for. This mental pressure and breakdown of the main characters. Showing them in their moments of greatest insanity (with the locations having significance for most of them).
And the plot was going so well! And then, like most anime I see, they completely shit the bed by the finale of the story. But damn, that intro, and that first buildup of the show, so fucking awesome.
And this one just hits all my Epic Battle buttons in my brain like a methed up monkey with a stick.
The music's got such a energetic defiance to it. And that bit towards the end, when you see the countless soldiers all float up into the air at the same time, as if all of humanity is literally rising in defiance of the titans. Oh hell yes. I love that shit.
