Pretty much anything made by LucasArts in that time period that did not involve Wars or Stars in any way.

Grim Fandango, Monkey Island, Day of the Tentacle, etc.

I was pretty late with gaming, so I haven't played a whole lot of things that came out before 2000. But still I;ve got some ofcourse, and I can't pick 1 in particular: Age of Empires 2 (started with that one, played 1 afterwards but didn't enjoy it as much), Worms 2 (hilarious, fantastic at parties), Pokemon Red (the memories...) and Unreal Tournament. I shredded those games.

The Bard's Tale. (The original on the Apple IIe)
Eye of the Beholder
Pools of Radiance Series (Curse of the Azure Bonds, etc)
Ultima V
Heroes Quest (So you want to be a Hero)
Syndicate

Command & Conquer,
Counter-Strike Beta 4 (still the best version of that game ever, even with the FN P90 straight up kick),
Kirby's Dreamland for the original Gameboy,
Sonic 1 & 2,
Super Mario Bros 3,
Dragon Warrior,
Descent.

mine is Unirally for multiplayer party gaming goodness, Killer Instinct 1 and 2 for fighting (yes I prefer them to street fighter 2), Wipeout 2097 (XL to my american friends) because I may be a mad raver, Sonic 2! w00t. Zombies ate my neighbours, Yoshi's Story, Unreal.

Funny that, I'm saying lots of games, but recently I can only name Half life 2 and SoF2 as truely outstanding.

I might be showing my age but most of my favorite games were released prior to Y2K. I thought and still think the PS1 was the greatest of all consoles because the shear number of quality games has never been equaled or exceeded by any system other than the ever evolving PC.
