Such to list a small selection, primarily from a video game source however a vast majority of Il Divo, Celine Dion or Josh Groban is soothing melodist mastery. Within Temptation, Evanescence and Nightwish have wondrous pieces as well. I best refrain from additional youtube links...

Those whom question yours, must do so for mine I suppose. "A Beautiful Day", I have listened to in much excess; a unique mix of an energizing beat whilst still relaxing.

That'd be quite a long list, not sure which one would be at the top, but a biggy is Kula Shaker - Persephone, but it's not on Youtube (strange as it might sound) so I can't post it.

Most of Porcupine Tree's music, they have some harder stuff but if I want truly mellow they have a couple songs like "Arriving Somewhere but Not Here" and "Russia on Ice" that are great for just relaxing and slipping into.

Though I have to agree with Keyworkkiller, anything by Sigur Ros, while good, is gonna be so mellow you'll turn into a narcolept.
