One of my faves is Van Halens cover of The Kinks, You Really Got Me. Also Stevie Ray Vaughn's cover of Little Wing by Hendrix. And lastly, Black Strobe's cover of Bo Diddley's I'm a Man has been a guilty pleasure as of late...
Manchester band Kill II This covered Frankie Goes To Hollywood's 'Two Tribes' on their third album. It's a good heavy cover, and it's greatly helped with spooky voiceovers from Taff The Voice, KIIT's resident voiceover bloke.

It's sufficently different from the original for both versions to have merit, which is rare in the world of cover versions.
Their cover of One is also epic. I think I'm one of the few people who like their no-lyrics cover of Oogie Boogie's song from Nightmare Revisited as well ... oh, Here it is!

Now, I like all three bands. In Flames is probably my favorite band at the moment (based on the fact that I listen to them more than anyone else, generally), but their cover of LoC just kinda... Bites. Genesis' version is just... I dunno. Disturbed covered it well enough to do better than the original. My opinion anyway.
