Actually, the Raging Bull in Vegas is the closest game enviroment sound I've ever heard that put me in mind of being on the shooting track. (I'm an quasi-pro pistoleer and all-'round weapon nut) Most games just don't capture the deafening effect a gun, shotgun or rifle has in a closed enviroment.
My personal favourite, real life and game-wise, is the bow. Preferrably a classic, sweet longbow, though I'll jump on a recurve bow in a pinch. There's something about feathering a man (well, target) at a hundred yards, knowing you beat the calculation of ballistics, boreales, wind and humidity and compensated accurately for your projectile's weight. While sniping (and I'm certainly not ragging on rifles; I'm a nearly a marksman grade rifleman and a hobby hunter) contains a lot of the same elements, it just lacks that little something.
Also, walking up to your target nearly two hundred yards away in a game like Mount & Blade and finding your arrow lodged in his neck beats any other feeling of skill-shooting I've found in games.
