MGS3 takes the prize for me, mainly because of one song.

The two that've kept my attention the longest are the Final Fantasy XIII and Sonic Unleashed soundtracks.
I think Final Fantasy takes the cake. Unleashed's soundtrack had some pieces that were better, but had others that were worse. Final Fantasy stays consistent, thus gets bonus points, making it my winner.

I liked the Persona 3 and 4 soundtracks better though

I remember that it was Super Mario World on the good ol' SNES that showed me that a video game could have a neat soundtrack, but it was Megaman X5 on the PS1 that was one of the first video game soundtracks that I remember completely blowing me away.

Starcraft 2 is awesome. It is a score of epic proportions! Makes some blockbuster movies pale in comparison.
