Fighting games (boxing anyway) has been done
There are several MMO FP games
There is a mod for football (soccer to some of you) for Half-Life played in FP

I will agree though FP is one of the most immersive ways of playing games and could be used alot more...

A First Person stealth game would be good. I like the idea of not knowing if someone is behind you while you look in a computer/Briefcase/Chest/Wheelie Bin. I would like that sort of Challenge. But it would be nice to have a sense of the room, slight sounds are detected or something.

First Person Fighters sound a bit dissoriating.
Thief: The Dark Project was one of the first 3D stealth games (along with Metal Gear Solid a few months later).
The Dark Project, as well as the sequel, The Metal Age, were both first-person stealth games. The optional 3rd person view was only added in Deadly Shadows.

As far as FPS games where you can see your legs, Halo 3 and Hitman 2,3,4 comes to mind.

EDIT: Almost forgot: On Mirror's Edge [http://www.on-mirrors-edge.com/] seems to attempt something slightly different, though it remains to be seen to what extent.

Don't forget FEAR & Dark Messiah of Might & Magic.

Speaking of Dark Messiah, that's the best example of a FP slasher.

I'd rather have something that was a mix of elements, the best example being Metroid Prime. I was much more enamored with exploring the environments and gathering information about the planet and its flora and fauna, and I could easily switch to a combat footing on the fly whenever it was necessary. I'd really love to see more of that mixed style of FP gameplay.
