To name a few...

Bioshock's 'Fort Frolic' was a flat out fantastic fraction of one of my favourite FPS's.

I also celebrate Thief 2's 'Life of the Party' as the most fun and well decorated sample of level design I've lived to experience, and Thief 3's 'The Shalebridge Cradle' simply rocks.

Starfox 64's 'Area 6' is un4gettable.

Psychonaut's 'Lungfishopolis' was so hilarious it left me gasping for air.

Oh, that train section. I could play that over and over, it was awesome!

Satisfying for me, probably Time Crisis 3. I used to have the home edition and at one point got so good I'd be using one shot per bad guy (in the bad guys who could go down with one hit). That was fantastic.

I loved the REX vs RAY battle in Metal Gear Solid 4.

After a long time dodging Gekko's and Dwarf Gekko's (I hate those) and a frustrating boss battle, letting it rip with robot on robot violence is the best way to relax. Too bad it was so short. Seriously, that was better mech combat than I've seen in many a mech game.

When I beat go of war 3 I got this wholesome feeling, like I had scarfed down a very filling meal.

Killing the Salamander in lost planet 2 demo was very satisfying, shame the game is apparently terrible.

Killing any boss character very quickly in prince of persia 2008 is satisfying, along will all the platforming sections.
