Jesper Kyd's work on Assassin's Creed comes to mind. Daisuke Ishiwatari on Guilty Gear & BlazBlue, Anamanaguchi on Scott Pilgrim and Jared Emerson-Johnson on the Telltale Sam & Max games are definitely worth a mention as well

In no particular order; The Halo series (CE, 2, 3, Reach) has some fantastic pieces I'd recommend without a doubt, Elder Scrolls: Oblivion is best decribed as harmonious, tranquil and peaceful, lastly Mass Effect 2 which has pride of place on my MP3 player.
Last night an Escapist posted two pieces from Victoria 2 that I enjoyed so much I bought the soundtrack on Amazon immediately.

I'm a pretty big fan of game soundtracks, I usually buy any I really like after finishing the game. The OST for Assassin's Creed II is well worth getting, as are any of the Halo soundtracks. My favorite one from the Halo series would have to be the soundtrack for ODST.

I haven't actually ever heard a game soundtrack that I'd consider buying, or even listening to in my spare time, for enjoyment.

Does the licensed music from the Bioshock and Fallout games count? I like a lot of that stuff anyway. And most music from the Guitar Hero/Rock Band games. They're still soundtracks, really, right?

EDIT: Just remembered the track Rage of Sparta from God of War 3. Really ominous and epic, sums Kratos up perfectly. http://www.youtube.com/watch?v=BLEBtvOhGnM

I have dozens of game soundtracks on my music player. Many games have just plain epic music. Assassin's Creed, Armored Core, Final Fantasy and Half-Life come to mind. Sure I'll buy them, same as any other good music. Shame it's often so hard to get hold of them.

There are plenty of game soundtracks that I love, but only if it accompanies the actual gameplay.

Without that, most of the game soundtracks I like would feel way too boring.

I have a ton of game music on my ipod. Personally the best of it is from mass effect, zelda and banjo kazooie. If you're really into game music, new and old, check out this guy on youtube -
http://www.youtube.com/user/SupraDarky - he uploads a different piece of game music most days. I've disovered a lot of good stuff from him.
