Wow, surprised about all those Dota critics.

Preferences probably play a role about what kind of gameplay one will call dull, so here are some genres/games that come to my mind:
- many JRPGs
- Dear Esther (I liked that game though)
- many visual novels
- Minecraft
- most Jump'n'Runs
- some turn based games
- many bad games
- grinding heavy games

but since this topic has a strong negative touch, let me also list games where I have a blast watching them and where I directly would like to play them:
- shmups
- fighting games
- fast paced shooters
- Dota 2
The pitches for stuff like Dota and LoL might be due to it being hard to follow for outsiders. At least that's what I take from it. Whenever I try watching videos of a full game it starts easy enough to follow in that I can tell what is going on, but as players get more powerful it swiftly decends into too much of a clusterfuck to keep up with. Here are my thoughts at that point:

"What the fuck was that?"
"Who just killed who?"
"What are all these words being thrown around?"
"What is the goal?"
"What is going on?"
"Why should I care?"
"FUCK IT! I'll go watch something I can follow."

Crusader Kings (I or II):

Hm, who is the Count of Holland?... (Open his stat-block)
Hm, he does have a daughter (Open her stat-block)
Unmarried, but crappy values ... eh, but a younger sister (making note, assassinate her later - open her sisters statblock)
Ah very good, i will propose a marriage with her and my son. -My diabolical plan will come to fruition... in ten years. (Close her statblock)
Hm, i am invited to a feast. Who is that dude (open his statblock)

You get the idea *g*.

Civilization 5. You just look at it and think, "Wow, nothing is happening at all, it must be really boring." Then you play it and next you know its three in the afternoon two days later.
Gotta capture those precious precious spices before France after all.

I think Civ 5 would be an example for me too, doesn't look fun, is not fun to watch, capable of handily devouring a weekend without you noticing.

Most games aren't all that fun to watch though for me.

I find that play-throughs of MMOs tend to be really boring to watch. I watched a roommate playing Everquest years ago. She was traveling from one point to another, spending about 5+ minutes running across the map. I remember thinking "Wow this is boring. How the heck is this crap popular?!" Of course, now that I've played MMOs, I can see the appeal and the feelings can be very different when you're playing it.

Minecraft. I just don't see the appeal of virtual Lego.
Agreed. The graphics actually give me quite the head ache. WATCHING people play the game is somewhat akin to people building a model railway set. I can however somewhat see the appeal when I play it myself but, as I stated before, the graphics give me a headache and I quit after 15 minutes.
