I remember I really had fun playing Prince of Persia: TSOT with my boyfriend. It's not that violent and it has a nice atmosphere (no wonder Bruckheimer wants to turn the series into a movie trilogy). The platforming sections are very well done, the controls are tremendously intuitive, so you could let her play those while you do the combat parts.

How about Audiosurf? You can play with the character Double Trouble, which is co-op mode.

That should be a good start, I reckon.

DIRT work with a mouse?
XBOX 360 controller. I don't own the console but its the nicest controller i have ever held. Native support with Windows. All the controls you could eve need. Not too expensive either. The wired one is good enough for me.

If she likes all those tv shows, try her on Lord of the Rings Online - beautiful, familiar, co-op and thoughtprovoking.

Silly as it sounds, she may like Nancy Drew - not co-op but fun side-by-side and it's a world most women are already familiar with. It got me into gaming... I'd also suggest gifting her with a Nintendo DS and Phoenix Wright and Hotel Dusk. Sure you won't be playing with her, but that will come if she can get interested in gaming. Katamari Damacy too :)

24 made a pretty good game... My ex-wife was addicted to Star Wars Battlefront II, but she is a bit sick in the head anyway... but the co-op feature is quite fun...
You got to be kidding? It's got the most exaggerated auto-aim ever made! Go for Rayman raving Rabbids (number one is the best, and it's available for PC)

Thank you everyone for the suggestions--it looks like I have about 20 ideas to explore. Hopefully, one or more of them will pan out. I'll keep you posted.

If you have a Steam account, you can download Audiosurf for about $10. It's a fun rhythm/puzzle/racing hybrid that allows you to use any CD or mp3 track you own. What's more, it has multiple game modes that range from casual to hardcore in difficulty. Definitely worth a look.
I second this suggestion, audiosurf is a very intuitive concept (everyone I've shown it to has picked it up immediately) and its an absolute blast.

I enjoy Audiosurf a great deal as well.

In that vein of games, I would suggest Peggle as well.

Something you can LAN though, hmm ... can it be Abstract violence? Cartoon violence? Alien green blood violence? I guess I need to play more puzzle games, but its slipping my mind at the moment of one that is multiplayer and completely non-violent.

Well, I see you are looking through some options, hope it works out for you. Strange at may seem though, the one that got my lady into PC games finally was Unreal Tournament.

It's such a shame Beyond Good & Evil starts with that fighting scene, it's such a lovely game to introduce people if it just weren't for that scene.
Yeah, it does come right out of the gate with what is probably the weakest part of the gameplay, but that said, it is not what most people would consider particularly violent. It's a stick, and the aliens just kind of pop and vanish, rather than spurting blood, be it green or red. Also, that first little fight is quite short, and story-wise, it does establish that the people she loves are in immediate danger and that she's willing to fight for them with whatever she has, even if it's just a stick.

Oops, didn't realise that you only had a pc. In that case, the best option is Worms. Cartoon violence, a hefty dose of silliness and you don't even need 2 pcs! You should be able to pick up worms world party from somewhere on the internet for a fiver, tops.

my suggetions come from me getting my girl slowly into gaming, and here's what i've found:

A) she seemed to like to drive around in burnout paradice city, even tho she never done any races etc, she like to drive around the town.

B) she likes Zak and Wiki, she likes the cartoon style and after getting her to think more logically, she's kind of addicted to it, even tho she gets stuck and sometimes annoyed. she still plays it :p

C) she dont mind the occasional go of guitar hero on the slowest speed. she still rubbish, but at least she has a go. :p

D) Probably the most effective games are tv shows like deal or no deal, who wants to be a millionarre, telly addicts etc...

i think wii games would prolly get her into games the most, as its easy to do. move around and move character etc... but seeing as your on pc, i'd say go with "D"

anyway. good luck :)

Update: At this point, my short list of games for my wife (out of the ones recommended here) includes, in no particular order:

Audiosurf
Track Mania Nations
Beyond Good and Evil
Civ4
Test Drive Unlimited
Longest Journey/Dreamfall
Syberia

Some misc. notes: Knowing my wife, I don't think she'll like cartoony type graphics much, which ruled out a lot of good ideas. I also don't think she likes things that are too weird. Beyond Good and Evil looks interesting with a fair amount of variety in gameplay. Civ4 I already own so I put it on the list, but it might be a tough sell because it is fairly cerebral and may not provide enough instant gratification. My wife likes Hawaii and likes driving games so Test Drive Unlimited might work for her. I think the realistic (less cartoony) graphics and female protagonist of Longest Journey and Dreamfall might appeal to her. No one mentioned Syberia, although it looks to be similar to LJ and DF and might appeal to her for the same reasons. Thanks for all the input. Any more thoughts are always welcome.
