Most fighting games save their nastiest/cheapest fighter for last, such as the DoA example above. Even Smash Bros. is not immune, making virtually all of Tabuu's moves one-hit-kills on higher difficulties.
I've said it before on this board and I'll say it again- Caulder in Advance Wars. Even with his CO power nerfed, he is still banned from online battles, to say nothing of his Mortars and Lasers crippling your army, and the two hatches that create any unit he wants free of charge... Oops. Guess I did say something. At least the battle is short either way- you won't be fighting for 50+ turns only to fail like in the first AW's finale.

I would have said Demon's Souls but then I remembered that blob of King Allant and how much of a pushover that was.

Starfox 64, while it wasn't the last boss: when you fought Star Wolf and his team on Venom. It was ridiculously hard.
Well this might not be a Last Last boss, but Odin from Final Fantasy 13. (he's an end chapter thing) I've never been good against bosses that require a specific thing besides kill it.
@#$% you Mammon, @#$% you Andross' true form, and, especially, @#$% YOU HECUBAH!! She can be invisible, teleports away when in danger, can summon minions to distract you, and, worst of all, her most common attack is what amounts to an undodgeable instant death ray on anything but the warrior class (that one needs two. Did I mention that she can do use it about twice a second?).

but you fight that son o a ***** a good 30 or so times. and the last time...dear god that is just unfair in every way shape and form, and i wasn't even doing it on any of the hard modes.
