I don't know anything about epic boss fights, but when it comes to sucky ones, I'd have to say the last boss in borderlands. The game was so great, but the end was so anticlimactic.
The Archdemon was pretty terrible too.

Probably going to be hated for saying it, and they aren't technically 'last' boss, but the raid fights in World of Warcraft are some of the best scripted and designed out there.

Now if only you didn't end up doing every fight dozens of times till the point you just want them to die and drop the damn loot already.

Ganon at the end of Twilight Princess was one of my favorites, if just for all of the different forms.
I see your Gannon and raise you one basically every LoZ on the GB/GBA

When I played WoW I felt a lot of them were swing and miss. Some were really fun with cool designs while others were either too boring or too punishing/linear.

One of the few most awesome boss experiences I have got have come from Resistance 2. Especially the Leviathan.

Secret of Mana on the SNES. That was back in the days when they weren't afraid to have stupidly hard boss fights.

I fought that bloody dragon for 45 mins, had only one party member left, no health, and I was one hit away from dying and having to start again. I dread to think what I'd have done if I died.

Lavos from Chrono Trigger.
Also Sigma in Mega Man X 1-3. All those battles are pretty tough.
And Andross in StarFox 64.

most memorable for me...i thought the last fight in Kingdom hearts was fairly epic, and i thought it was on par with the 2nd as well, also final fight with snake and liquid, that was very epic

Christ, the last boss on Fable 2 was just epic. I mean you play straight through Dragon Age defeating every last monster and BOOM... In comes Fable 2 where you have to SHOOT SOMEONE.

/sarcasm.

Sarevok in Baldurs Gate.

Amellisan the Blackhearted in Baldurs Gate 2:Throne of Bhaal.

Planescape:Torment if you actually fight the Transcendent One that is.

Ultimecia in Final Fantasy 8 She just won't die!

Kabuto in Giants:Citizen Kabuto.

That's certainly true, when you're playing a game with dozens of boss encounters some are guaranteed to be disappointing. No denial there. But then some of them are just pure insanely well designed fun not to mention more epic than almost any singleplayer game has ever achieved.

I can't wait to see what Blizzard comes up with for Diablo 3, I really can't! They're one of the few developers out there who just seem to be getting better and better over time.

The final boss fight in Bayonetta was pretty fantastically epic. (I won't say for spoilers since it just came out like yesterday.)

Hmmmm.

Dragon Age bosses in general are pretty epic. Mellisan from BG2 comes to mind, too.

Too easy. Unless....

Your average level is less than 10. Now that's an epic fight.

Edit: Yes, they are at full health.

Sonic 3 & has an pretty epic showdown. (Including Doomsday Zone)

DKC 2 as well, I choose Crocodile Cacophony over Gang Plnak Galleon any day.

Pokémon Blue/Red vs. your Rival was also awesome as was the fight in St. Mountain. (Pokémon Silver)

In Devil May Cry 4, when you fight Dante was also epic.

The Matrix Path of Neo actually had a pretty epic last boss and then the surprise ending was awesome if a bit long.

Devil May Cry 4 was pretty epic I mean you have to fight every boss in the game to get to him and then he's harder than all of them!

LOZ ocarina of time was freaking awesome when you fight Gannon.

It's also tough if you try beating it with just Chrono.
