I second all the people who said Sleeping Dogs is a good melee game (and a terrible shooting game.) It doesn't rely on gadget tricks that you see in batman so you have to learn some of the techniques (like kneeing someone's face) to win combat. I felt it required a lot more skill.

Dark Messiah of Might and Magic has awesome physics based fighting.

Risen 1, 2 and 3 are also pretty satisfying once you get used to the system.

Ex Anima is a fully physics based isometric RPG that can be loads of fun.

So, what are some of the games make your list?
Ninja Gaiden Black. You need to be on the ball or else you will be punished. I would say it is as punishing as Dark Souls, but it has a quicker pace to it. It is a little more defend and counter attack oriented, like Dark Souls, as well.

I will also say Oni for the PC, a really cool combat system. When you can combo and chain moves together, it feels awesome.

Shadow Warrior definitely it is amazingly fun to carve up enemys with your katana

I will also say that I really enjoyed the combat in Kingdoms of Amular and that's because of the Chakrams
It was so fun just tossing them about while leaping nimbly away

Another for Dying light, not only because it is a superb game, it really is but because the developers have also been awesome, they have released a bunch of free content and events for the game and are still planning to release yet more free content for the game some three years on. The expansion you may have had to pay for but it was well worth it and added enough new content and story with a huge new section to explore to more than justify the cost.

The combat is very satisfying clubs and bats hit with a meaty whack, swords and blades stab and slice nicely and taking a zombies head clean off, vaulting them to then come down with full chest stab on the zomobie standing behind it is just brilliant, the combat, once you learn it flows amazingly and their is enough variation in the zombie types that you are left with a sense of do I fight, do I attack, do I go a different tactic route or do I just run. On top of that their is enough weapon types and variety to allow different combat types on even the basic types of zombies. Someone mentioned guns, as being in effective, I disagree the weapons are very effective within the context of you using them on an undead foe and they have the downside of being loud enough that they attract special zombies so their use has to be considered and finally did I mention the Volatiles? These are the zombies that come out at night, they are fast, they are tough and they are proper scary as f*ck, and I am not talking scary until you get to a certain level or skill set then they become little pussy cats. I've unlocked everything have a well equipped character and a full skill set and know a trick or two and even I run when I see one of these things.

The sense of sneaking around at night hoping not to be spotted only for one to see you, that moment when you have to find the closest safe house and then run, breaking all attempts at stealth and alerting more volatiles as you parkour by and that feeling of safety when you just make it, turning round too see the two or three volatiles screaming at you from outside the safe zone.

Yeah Dying Light is a very very good game.
