Most Mario games.

Maybe not Sunshine.
Sunshine is the one I end up playing over and over again every time! I find it's bright, cheery theme to be amazing, way better than Galaxy or 64.

The games I end up playing over and over again are aforementioned Mario Sunshine, Zelda Majora's Mask, Windwaker, and Twilight Princess, Just Cause 2, the Assassin's Creed series, and (of course,) Minecraft. I'm not sure if Just Cause and Minecraft really count though, because you can't really "finish" playing them.

Any NHL game. Sometimes I also go back and play the original Hitman game for fun.

Mount and Blade is good for unending gameplay. I spent months carving out an empire all my own until I finally replaced an entire kingdom and began scouting out new territory.

The Elder Scrolls: Oblivion, the amount of mods available make this one of my all time favourites and longest installed games.

GTA San Andreas is great for this too. The massive map allows for endless dicking around and exploration. The new GTAs? Not so much, which is a pity.

Fallout: New Vegas for me...
Yep.

More picks: Mass Effect series, Left 4 Dead series, Nethack and ZAngband, Mount and Blade: Warband, Civilization Revolution. Several more.

Older games: Sword of the Samurai and Sid Meier's Covert Action. There's others, too, but I'm feeling lazy.

I´m confused no one has said Minecraft yet....
thats because minecraft hasnt actually been released yet, also people seem to be going with older games, so minecraft just doesnt feel right to be in this category yet.

Oh, and for me its the splinter cell games that never get boring for me. Not the multiplayer cause splinter cell multiplayer kinda sucks, but its just way too fun of a game to play through once and be done with it.

Age of Booty
It's a simple RTS, but the resources and AI behavior are random enough to keep it fun. Its multiplayer is also pretty solid.

Star Trek: Armada
It's a bit old, but I played it for a few years, both campaign & multiplayer. Even when I get bored with it for a while, a few months later I'd be playing it again.

Both of those can use bots too, so multiplayer is available even when you don't feel like playing with others.

Dead Space. I've already finished it 5-6 times but every time I see the disc lying around in my room I get tempted to give it another spin.

Klonoa 2

I'm not even sure why, but I've lost count of how many times I've replayed it...
Wahoo Stomp? It's a darn addictive song...

Tales of Symphonia 1 and to a much lesser but still significant extent, Tales of Symponia 2. I've beaten the aforementioned Symphonia a total of I think 7 times now, and I'm still finding new stuff in it.

I have a pretty fickle attention span, so my go-to game changes. I usually just revisit old favourites, but there's never any one game that I could guarantee enjoying whenever. Even my favourite game, Diablo II, only appeals to me every now and then - just like any other game.

That said, Saints Row 2 is always a laugh whenever friends are around.

Touhou. I just started playing it..... ON A MAC! BOOYAH!!!
Anyway, I'm really enjoying the gameplay: fast, edgy, explosive, and insane.

Also the original Starcraft Brood War and Warcraft 3, because those are still fantastic well paced games that still provide a lot of challenge. Did I not list Starcraft 2? Oh, I'm sorry SC2, come back to me when you'll stop spoon-feeding me on my missions.

STALKER: SoC and Metro 2033, both of which I've beaten three or four times
