Castlevania Symphony of the Night, complete graphical overhaul and new voice acting. The gameplay is perfect it does not need to be changed. Christ it would be fecken sweet. I would happily pay 60 quid for this remake alone

Ok, really I'd go with Baldur's Gate, Planescape, and all the other games based on that engine. The low res textures begin to strain my eyes after I play for a while, and they had some pretty good looking landscapes that would look even better in finer detail.
