"Probe away" (Mass Effect 2)

And a few from Star Wars Battlefront 2, I played a ridiculous amount of that game back when it was new:
"I can't shake- oh, wait, never mind." (Rebels in space)

I can pretty much call up any of those perfectly from memory.

Funny enough my friend and I always use that phrase just as a punch-line whenever something involving light and darkness are involved. Never gets old. XD

For me, I remember telling this one kid at my mom's job that particular line when they randomly asked me what light was... Could not pass up a moment like that...

-If you don't recognize it, you clearly never played Shadow of Chernobyl. If you did play Shadow of Chernobyl and don't recognize it, then you either stopped very early in the game or have the worst memory imaginable.

"Down, dammit, stay down!"
-Not sure why, but this phrase from one level in the original Call of Duty stuck out to me. Maybe it loops during the first intense battle of the game.

"Do you wish me to leave before finishing my store?...As you wish."
"Done, I'll start the story from here next time."
"No, no, no, that's not what happened."
-All of these phrases and the others like them did a great job of cementing the storybook charm of The Sands of Time.

Right there with you on Prince of Persia. Another one from the series that sticks with me for some reason is the Dark Prince when you're trapped in the well saying, "Time is precious, time is fleeting, time....is something you have very little of prince."

Honestly, I just loved that voice actor though.

Four I can think of off the top of my head.
"The order dictates" from Dragon Age 2, at the beginning when that one guy wants to kill your sister.
"For the union" from Red Alert 2, sometimes when moving conscripts.
"This armor's heavy" from Stronghold Crusader, when moving Crusaders. To be fair, a few of their lines are burned in my brain as well as other stronghold lines.
"Retribution" from Fallout New Vegas, when Caesar Legion assassin's come for you randomly if you killed Caesar

I'm not in your grill or whatever you say these days, just genuinely interested if I've been missing something.

Most people say it's from UT, but it's not in there. I first heard it back when Pure Pwnage was a thing, and that wasn't even in reference to "Headshot!" in UT but was just some nutter overenthusiastically playing CS.

"Insufficient funds." - EVA, every C&C game ever.
"I'm not putting my lips on that." - Ben, Full Throttle.
"I WILL DESTROY YOU!" - Any female enemy, Mass Effect (note: I think the men say it as well, but it's far more noticeable when the women do).
"He got me with his wire thing!" - Enemies upon being grappled, Just Cause 2.
"Your creatures are winning a/falling in battle!" - The Mentor, Dungeon Keeper.
"Flammable! Or... inflammable! Forget which, doesn't matter!" - Mordin when using his incinerate skill, Mass Effect 2.
"Unit under attack, squad four. Squad four recharging." - Monitoring AI during combat, Ground Control.
"Huh? What was that noise?" - Enemies upon hearing the player, Metal Gear Solid.

Oh, and of course, the title of the thread. I could go on with these, but I'll leave it there.
