Just dont make the mistake I did 3 years ago and introduce her to DDO. My girlfriend promptly took over my PC and I ended up watching her play my fav game for 6 months till I was forced to split up with her to get my PC back.

My girlfriend isn't really into games (other than bowling on her wii, but that doesnt count lol) but since we been together she's been trying a few out, so far Dead or Alive (or insert standard button bashing beat-em-ip here) and Guitar hero world tour have been huge hits

I guess it mostly depends what your gal is into. If she likes reading and stories/identifying with characters etc she might be into RPG's and such. Mine likes shiny pretty colors and music so GH works great.

Or if she likes cars a good driving game can't go amiss (Gran Turismo, Forza etc)

Prince of Persia (the new one).
Why? It's easy, doesn't punish you for losing, it has a good story, it looks very pretty (both from a technical and an artistic standpoint), a strong female lead (which I'm sure your girlfriend will find endearing. I know I personally loved Elika), fun gameplay with a lot of variety, and a story that's superbly told.

If she's into story-heavy things, you can't go wrong with an adventure game like Dreamfall: The Longest Journey or The Curse Of Monkey Island (that's Monkey Island 3).

If she likes cars and whatnot, make sure to start her off with an arcade-style racer. That means no Gran Turismo, no Forza Motorsport and God in Heaven no Racedriver Grid. Burnout, Flatout, etc works well.

Oh! How could I forget!

The Sims 2, and any expansion you can get your hands on. It's one of the most popular, if not THE most popular game for women. Easy, open-ended, lots of customization, Maxis-style silly randomness.
In fact, I'm going to play right now. Gushing about games makes me want to play them.

I'd say simple games like Animal Crossing, Wii Sports, etc.
You may mock me, but Animal Crossing was the game that made me a hardcore, IGN-lurking, ZP-Watching, Review-reading gamer that I am today.

I would say anything that's simple and/or has a good reputation. For instance, some of the easier Mario platformers (2d) are good choices because all you have to do is run, jump, and solve the occasional puzzle, plus she's probably heard of Mario before. Of course, you don't have a Wii or DS, but just take that as food for thought. Alternatively, games that play like movies are good options, because they would give her a sense of familiarity...so perhaps the new Prince of Persia would work, given your restrictions. In any case, try to pick something "addictive" as well. That way she'll want to keep playing, especially if its easy to pick up and play.

I would suggest, if you really want to go all out, that you get her:

1) a Nintendo DS
2) New Super Mario Bros.
3) Kirby Super Star Ultra
4) Professor Layton and the Curious Village
5) Pac-Man Championship Edition
6) Prince of Persia (The new one)
