An inventory system does not an RPG make. A somewhat complex leveling system and a heavy emphasis on statistics-based gameplay on the other hand...
In STALKER you collect stronger weapons and ammo as you advance in the game, and both games have a main quest with side quests allowing for exploration

Much like every shooter ever...
No in every shooter ever you get new types of guns you dont get a new more powerful assault rifle or shot gun, you get a rocket launcher or BFG and keep your original guns

Yes, that's why there's a whole bunch of different assault rifles, pistols, shotguns and other types of weapon in every Call of Duty game. Also, in Stalker the presumed upgrade isn't forced in any way, even weapons from the start of the game have there place. Hell, in Call of Pripyat, I'm still using my trusty hunting rifle which was the first weapon I bought in the game.

Let's see, we have Wasteland. Dated graphics, but very very solid gameplay. Spend an hour with it, and the graphics will no longer bother you, and your life will be enriched.
If you liked wasteland, then you are in luck, because it got a sequel: Fountain of Dreams. This game is not as groundbreakingly amazing, but still a solid game. (CRPG)

If you want the postapocalyptic feel, but in a fantasy setting, then check out Dark sun. Not the best games ever, but solid (and darksun has bands of ravening flesh eating gnomes, yea take that cookie cutter common AD&D gnomes!) (CRPG)

Armageddon empires has already been mentioned. Check it out, it is great! (It is a strategy game)

We also have UFO: Aftershock & UFO: Aftermath, again not amazing, but still solid. You can get the entire UFO trilogy for next to nothing these days. (These are tactics games)

Abomination is worth checking out as well. Not as good as X-com, but still solid (Again, tactics games)

Chamber of the sci-mutant priest has a bit of a fan following. Not played, but apparently it is supposed to be rather good (CRPG)

Dark Earth is a really solid action game, that again has quite a fan following. (Action-adventure)

Warzone 2100 is one of the finest RTSs around, and it is absolutely free [http://wz2100.net/download]. (RTS)

And that should be enough for now.

I'm not knocking Borderlands. I had fun with it. It had a splitscreen co-op, of which there hasn't been a good one since Perfect Dark 64. My friends and I played it for hours. But it's just an FPS. Calling it in any way an RPG is like calling GTA: San Andreas a BMX racer or firefighter simulator. They were tiny functions that could be easily ignored, but added to the appeal (if only in a small way.)
