I think if they re-did MGS3 with the camera and gameplay mechanics of MGS4 we would have a winner on your hands. But my favorite true stealth game has to be Chaos Theory. Even on Gamecube that game was kick ass.

Hitman: Bloody Money. (Xbox 360. Only one in the series I've played.)
Metal Gear Solid. (PS1)

Thief (2 was the best IMO),

Hmmm... not really a stealth game completely, but I really enjoyed Escape from Butcher Bay's stealth parts.

Other than that, the regulars: Thief, Splinter Cell, etc etc

I'm a Splinter Cell guy, personally. Unlike every other SC fan on the planet (or so it seems), I'm actually really excited for Conviction.

My second choice would probably be some of the Spec Ops missions from MW2. They're not really stealth necessarily, but it's fun to pop heads like watermelons with sniper rifles without anyone ever knowing you were there.

Far Cry, if you can call it a stealth game. The stealth-o-meter is the best thing ever to be incorporated in a game.

Splinter Cell has the meter that tells you how bright you are, basically if you are standing in the light or in darkness. Real good if you have NVG or thermal on and can't tell.

NOT Splinter cell: Double Agent. The regular levels are fun, I love the knife animation, but there are these levels in between where you have these shitty time limits, annoying objectives, and you are forced into moving at a certain speed. Also, you have to platform. Fucking platforming in a Splinter cell game. It's also super framey and glitchy.

Again, I play stealth games to quietly murder (hopefully knife) enemies, then watch them go crazy as their buddies dissapear. I have not ever completed a stealth game without killing everybody, albeit stealthily. I also hate time limits, so your mileage may vary with Double Agent.
