Might & Magic 4, 5, and to a lesser extent 6.

Jet Moto 2.

Mortal Kombat 2.

For something more recent; Virtua Fighter 5 is pretty amazing. I only played one other one once in an arcade (and don't know what number it was, probably 2 or 3) and it was such a huge jump in enjoyability that I was flabberghasted.

All I can think of right now.

Halflife 2 was a pretty awesome sequel. It took the greatness of Halflife, made it all shiny and rewrote the story.

Then they inserted those dull seesaw puzzles, but that's an entirely different story...

I also enjoyed the Burnout sequels. Each one took the success of the last and built onto it, adding new things and trimming the crap.

cod 2 , hl2 , tf2 , ut 2004 , max payne 2 , pop 2 thrones(especially after the disappointing WW) system shock 2 or bioshock(spiritual successor) , and many more

Metroid Zero Mission for the GBA was a great remake. Mega Man 2 was an awsome sequel one the NES. But I really liked LoZ: Major's Mask for the N64, not only was it a great sequel but it also managed to take a Zelda game to uncharted waters; and how can I forget Jedi Knight 2: Jedi Outcast for the PC.

Silent Hill 2 for reasons that it made silent hill even more of a twisted place than the 1st one did.

Project Zero 3, i liked them all but i really prefered the 3rd for its traditional j-horror scenes in the girls house.

Forbidden siren 2, granted not many people seemed to like this game but i thought the 1st had potential the only thing i hated was the horrible dubbing... and FS2 changed that by letting us select japanese with english subs.

Half Life 2 (and the episodes) the story of HL2 never seems to lose ground even in the short episodes.

MGS Twin Snakes... alright it was still the original metal gear solid, but with more slowmotion matrix style video sequences.
Jill sandwhich is totally still in there...just...less awkward. Sadly though, "Master of unlocking" is absent :(

I definitely have to say that the REmake on GCN and MGS: Twin Snakes are both very well done remakes...

do prequels count? Cuz I'd have to say MGS3 is amazing...

Also, Hitman just keeps getting better and better.

God of war 2 my favorite PS2 game and a tribute to the console and what it had achieved - head ripping

I'm feeling pretty oldschool this afternoon so here we go...

Quake 2, i improved on the original in nearly all respects and is still my favourite quake even now

civ 2 seemed like a big improvement over the first, the later ones i played just seemed to add small bits here and there

C&C generals, it was just plain better than all the C&C's that had come before (despite the fact i have alot of love for them)

Dune 2 (ok so the original Dune game was a totally different game but still the second was better)

Sonic the Hedgehog 2 for Genesis

adding tails was probably the best thing Sega could have done, except when he would jump unto a plaform ahead of you, and the platform would fall into the abiss right in front of you. Overall a great improvement over the first.
