Ok, I know this isn't actually from Reach... but I absolutely swear on my life, I heard Buck shout "THIS IS SPARTA!" on ODST firefight after holding a door for several intense seconds with a gravhammer.

Actually from Reach:

"I do love my job." - Jorge on Firefight, when he picks up a heavy weapon.

"Leave this... to professionals." - Ditto.

"ShaRUMaiECHul" or something to the effect - random Grunts conversing with Elites, sounding rather irritated.

"Ah! SANGHEILI!" - Grunt when it sees the player and runs, calling for its Elite masters (Sangheili means Elite, it was a cool little easter egg).
