You might wanna try Monster for some realism if you're up for it, Fullmetal Alchemist for fantasy and Elfen Lied for... Psychosis.

I'm still surprised people feel they have to suggest Cowboy Bebop. It's great, but hasn't everyone seen that already?
Berserk was one I enjoyed, but no "serious" or "adult" ones pop into mind right now. I've been slacking on my cartoon-a-watchin'!

For everyone one saying watch the OVA's I am, they are the same thing as Hellsing Ultimate are they not? So far I have found the Tv series to be superior. Whenever I really start to get into the OVA they do another stupid cutaway with Seras and go back to that silly sterotypical japanese anime style that just drags me right out. I like Seras as a character, and this problem isn't present in the TV series

I've seen no anime at all, so props to you for all your suggestions

I'v only seen the OVAs and I love it, its by far my favorite anime. Partly because its set in England. Mainly because its not as over the top rediculess as most animes.

Cowboy Bebop has been pimped sufficiently, so I'll throw my vote behind Ghost in the Shell: Standalone Complex. I find the films a wee bit impenetrable, but the series gives the complicated storylines room to breathe and fleshes out the cast no end. Also, it's a genuinely beautiful looking, expertly written series. Seriously.

Also, this. Stand Alone Complex is a brilliant adult anime, and the Major is just one of those 'cool' characters. Nobody is more badass than the Major.

Hellsing is good but it's steeped pretty heavily in typical anime tropes, so if you haven't come across any other anime you like I'd keep looking. Hellsing isn't really unique, especially the Ultimate OVAs that came out more recently.

I could never get into Hellsing.... dont know why.
I dont care for animes with whiney teens saving the world every episode that isnt filler, but i just couldent get into Hellsing. It felt to...... serious? Yeah, i guess that works.

My only knowledge of Hellsing is of a critic I like saying she didn't really like the show, but Ultimate was spectacular. Make of that what you will.

Yeah, everybody likes Bebop. Death Note got me into anime, and Elfen Lied kept me there, but Trigun, Higurashi/When They Cry (wonderful story mixed with wonderful characters and truly horrific situations and violence), and Gurren Lagann are my favorites. FLCL is awesome, but it's definitely made for a very specific pallet, so you may or may not enjoy it.

I absolutely love Hellsing, it's the second anime I ever saw (the normal series, that is). Not counting kids stuff when I was younger, my first was Elfen Lied, and my third was Death Note (not long finished that one). I did try watching the Ultimate episodes, but sadly I can't find most of them in English dubs as the company that did the dubs went bust and the series hasn't been picked up by anyone since. I'm waiting for that to happen before I watch the rest of it, since I don't generally like subbed anime as a rule (I miss too much of what's happening due to reading, and if I wanted to read the story anyway then I'd read the manga instead of watching an anime :p).

Upto episode 5 is all English and I just finished 4, after all that build up all thats left is subtitles. Bad times. I dont mind reading but the Japanese lanuage is so alien to me it completely ruins it. Gah

the only thing wrong with it is we dont know how powerful alucard really is i mean he could of deafeated the black magic guy at any point but was just screwing around until he could see how powerful he could get and even then we dont know how difficult it was from him as it seemed he was still in it for fun

I will recommend Ghost in the shell, but it doesn't seem to be to everyone's taste. Black Lagoon is very good. Try Full Metal Alchemist: Brotherhood I found it much better than the original but you may not like it from what I can tell.

Why does everyone immedately start reccomending anime? Anywho, you enjoyed the acting in the TV series? Really? Crispin freeman was excellent but Seras' VA was awful, she sounded high on painkillers and certainly not British. That and the fact the show had no real depth other then Alucard doing crazy shit (which it did very well).

EDIt: Reread OP, I was stupid

I wasn't the biggest fan of Hellsing, but Alucard was one hell of a wickedly awesome character.

I wouldn't know what other animes to suggest that would be to your liking except the golden oldies, like Akira, Ninja Scroll, Memories and Ghost In The Shell.

I'd recommend Baccano and Monster. The former can be wacky, but not in the way you seem to find annoying (Isaac and Miria are crazy, and you will love them for it).

Oh, and I've heard good things about Berserk. It's also a dark, adult-themed series in a fantasy setting with a badass protagonist.

Sure, but then again it's like writing off all western animation as childish because all you've seen is Rugrats or Kim Possible.

There's plenty of Japanese Anime that's great. I would recommend TriGun, Death Note (for the unimaginative), Elfen Lied (for those with a strong stomach) and FLCL (Just because)

I hope you go on enjoying anime, it's just like all other media. 90% is shit, always.

All the anime I would normally recommend are listed above but an older anime (and more adult oriented without becoming adult only) you should try is called Outlaw Star. Seriously this is a really good anime that you should watch, right now.
