Like others I say sniper rifle. Although I also like detonating a large explosion from a safe distance away.

Depends on how its needed to be done. I love the chaos, the brutality of a kill so over the top its not necessary. A car, hitting the target and making them one with the wall, their hear pumping in an ignorant defiance of its swiftly approaching death, that is a kill people will remember.
If you want it to be quiet? Give them something they're allergic to in a drink or a sandwich, watch as their throat swells, their veins bulge out and their eyes water as they desperately try to call for help.

'quietly' IE sneak into his house and put in a shit load of explosives under his bed, and the pressure plate under his pillow, then sneak out. silently... for a few hours anyway, in the mean time i'll be sitting on a nearby hill or rooftop quietly giggling to myself

I like jumping off rooftops and stabbing them in the neck in Assassins Creed 2 and Brotherhood.
Hell, I like that so much, sometimes I'll climb up on top of buildings, just so I can jump off and stab them. Even if it might have been easier to just run up and stab them.
Then again, I love pretty much all the cool little ways to kill people in Brotherhood. Poison, especially the darts, that's my favorite way to kill those snitch witnesses. Shoot em with the dart, saunter away slowly, grin when I lose all my notoriety.
And let's not forget the overpowered Crossobow. I once killed an entire room of enemies with that thing without ever getting noticed. I just shot and killed one guy, everyone else comes over to investigate, and I just pick them all off one by one.
Also, in Fallout New Vegas, I have a playstyle called the "John Wilkes Booth" in which I just sneak around shooting people in the back of the head with a revolver.

I'm going to be the fly in the soup here, and say poison. Either ingestion, intravenous or inhalation. Everything can kill you. It's all about the dose.
Sniper rifle always gets me, that feeling of the unknown assassin lurking somewhere just struck.
