How is Uncharted 3?

It's alright.
Gameplay is basically the same, with a few small improvements. The level design combines the combat and platforming a lot more than the previous games, which is nice. (Think the train level in the second game. More stuff like that.)
Story is more of the same. Drake and Co racing a villain to find ancient thing that may or may not be cursed. There's a bit of backstory on Drake which brings him dangerously close to actually being interesting.
There's an extended detour that contributes nothing to the plot and clearly exists only to justify a particular action sequence.
If you liked the previous games then I can't really see you hating this one. Although I know some fans were disappointed, so who knows.

It's a bunch of set pieces shoddily tied together by a crummy plot. Not that the plot of these games was ever great or anything, but in the previous games it at least supported the action well enough. Uncharted 3 just feels like a mess. You could tell the developers had certain scenarios in their head that they wanted to put in the game, and ultimately just threw them all in regardless of whether it would transition well from one moment to another. The pirates/cruise ship being the most heinous example.
There's an attempt at giving Drake some genuine depth, but that lasts for about one scene, afterwards he's just Joe McHero again. It's comparable to Donovan from Indiana Jones and the Last Crusade going after the Holy Grail eventhough he already has a cup that gives him eternal life.

The gameplay is mostly fun, but the story is kind of a mess. As others have mentioned, there a bit in the middle of the where Drake is Kidnapped by Pirates and taken to a floating pirate base thingy in the middle of the ocean, which then leads him to a cruise ship the pirates are using. Once Drake escapes and makes it back to shore, the entire incident is never mentioned again and has no connection to the rest of the plot. It feels like the developers REALLY wanted to have Drake escaping from a sinking cruise ship and didn't really care that the plot had no place to put it, so they just kind of jammed it in there regardless. That and the first pirate/ocean level involves you doing a lot of swimming while being shot at by pirates and it's really, really annoying.
Not as good as Uncharted or Uncharted 2, but still totally worth a play through if you liked the first two games. The reasons why have already been stated by previous posters, so I won't take up anyone's time by relisting them. Well, I will add that there are a few "hallucination" sections in the game that just feel like padding, are rather poorly made and, at least in my case, screwed with the pacing something fierce. Also, I loved the cruise ship, no matter how pointless it was to the plot.
The highs are the highest in the series, the lows are down with Uncharted 1. 2 is a better game overall, but 3 is still really good for all the reasons that make uncharted great. I would reccommend watching the Chip Cheezum lets play, it is great and will give you a good feel for if the game is for you. Uncharted 3 has by far the best set pieces in the game and some excellent dialog, but the overall story is weaker than in 2 and it drags in some places.
That is actually exactly what happened. All the Uncharted games have been made by saying "What are some awesome set pieces we could do? Battle on a train? Sinking cruise ship? Castle on fire? Sounds great! Now how do we link all of those together?" They come up with the set pieces first and the story second. They just managed to string the set pieces of 2 together better. One slight disappointment is that they introduced quick time events. However I think they only occurred two or three times, in boss fights, and they were always rubbish anyways. The platforming is untarnished, thankfully.
I don't really know what else I could add that hasn't already been said. It's not quite as good as Uncharted 2, but still pretty decent. Especially since you can probably get it for cheap somewhere these days anyway.

Uncharted 3 is excruciatingly average. The story and character development are horrible. U3 is the only Uncharted where if Drake and Co. just go home, the villain can't win. The characters are inconsistent in Uncharted 3 compared to the rest of the series, especially Sully. Drake is all set up to get some huge character development but Naughty Dog bails on that and the ending is just status quo. That then makes those chapters in the past completely pointless.

It does a good job showing us the nature of Sully and Nate's relationship but extremely dumb story elements distract from the good ones. There are several red herrings and a lot of the actions characters take make little to no sense. The combat is annoying and there are less options than in previous Uncharted titles.

Unlike most people I view Uncharted 3 to be on par with the second installment quality wise.
The only difference to me was that in Uncharted 2 I liked the first half better than the second, and in 3 I liked the second half better than the first.

I'm playing through the trilogy right now, and the third is easily my favorite. At least for me the first was really difficult, the 2nd had infrequent difficulty spikes mostly in it's level design and conveyance, but this one feels a lot more arcadey (the action is faster and more forgiving, and there is generally less exploration).
I got it when it was relatively new, played it for <3 hours, and haven't got back to it since. As far as I got, it just felt average. and better things distracted me.
In my opinion, personal favorite of the series. Story is as nonsensical as ever but less stupid "we don't know how to do Indiana Jones" and more "let's have great B-movie mess with all tropes imaginable". Set-pieces are by far the best yet, combat is at it's best by far, overdone sequences had me rolling on the floor from stupidity, supernatural elements are not quite as good as first game but leaps and bound better than second one's crappy gorillas, and the villain is clasical British noble pompous ass rather than retarded war criminal.
It's alright, but I personally never enjoyed Uncharted as much as people seem to love it. Uncharted 2 was one of the games I got when I first bought a PS3 and I honestly couldn't see what the fuss was about.

I played 2 and 3 for the first time this year, and I loved both of them. The second one was consistently good all the way through, while the third one lagged a little in parts. Still immensely enjoyable, but about three quarters through I got tired of it when the combat devolved into pop out of cover, shoot guy in head, pop back into cover, repeat a million times
Still, if you liked the second one, the third one is cheap enough that it is well worth the pickup, at least to spend some more time with Drake and Sully and friends

It's mediocre as fuck. It and the first Uncharted are the supermarket's own brand bread surrounding Uncharted 2's magnificent bacon in the Uncharted sandwich.
