I'd be... Chell. I have all the wheat I can eat, and my Companion Cube by my side! I love you, Companion Cube!

Oh such an excellent question. So many protagonists, some customized to your like such as those in the Elder Scrolls games, or those of a more specified bent, such as the Castlevania games. If I was forced to pick I'd say my Force Commander Jenkins from Dawn of War 2. I love that franchise waaaay to much and would love being a space marine.

My protagonist from Pokemon.

Then I'd get to be me, in a world with Pokemon.

Or in one word: AWESOME.

OT: Probably Red, especially since the Pokemon universe is almost definitely the best fictional universe ever (all the modern conveniences, super awesome pets, and terrorists who are kind enough to take their unconscious teenage victims to the hospital).
And pay you after every battle. They may be super evil terrorists, but rules are rules god damn it.

Link from Legend of Zelda, easily. Do I really have to explain why?

Yes, the joys of being mute, homosexuality, and tights.

I'd be a tetris block.
Homosexuality? And he has baggy pants in Skyward Sword.

Hmm... At the moment, it'd be my WoW-main. Wonder if there's any business opportunities for tauren paladins around? Well, after my wardrobe goes through a sexchange as well, perhaps.

I'd be one hell of an efficient faith-peddler, if nothing else.

Jak, from the series of the same name.
Well, flight and the ability to slow time would be pretty cool. Not sure how I'd restock on eco though, or how the dark powers would be useful in everyday life.

Either Commander Shepard from Mass Effect, or Gordan Freeman from Half-Life. Gordan would be easier for me, because I barely talk more than him anyway.

Alex Mercer. The guy is not my favorite character but I like how he can parkour and 'glide'. And the armor makes me drool - maybe I'll sign up with the Mythbusters as an indestructable (almost) human analog.

EDIT:

If characters based on real people count, Saladin:

If not, probably one of my several self-based custom characters. I'd lean more towards my Fable 3 character, not because I particularly like them, but because I just would not be able to die, in addition to the magic powers.

Yeah, okay, I can't narrow it down to one either.

Samus Aran: Hell, if anything, being gender-swapped would be an interesting experience, though a reversion clause would certainly be nice. Regardless, though, it'd all be worth it for her power suit. Space jump, speed booster and of course the morph ball. How could that not be fun?

Crono: Time-traveling hero with the best group of friends imaginable. Also, in the process of marrying his true love (and battle buddy/action girl), he ends up on the throne of his homeland. I could bring REFORM and DEMOCRACY to that primitive land! ...Or, according to Chrono Cross, get murdered off-screen during the invasion of my kingdom by a nation I accidentally empowered in the distant past. I'd, uh, have to do something about that, yes...

Commander Shepard: Adventure, heroism, romance...IN SPACE

Player-created characters aside, I'd probably have to go with the main character from Persona 3.

Never before has angsty hair and badassery mixed so well.
