First off, that's a depressing thought. I like those guys, I would rather they escaped and got to live than have them get turned just for the sequel...
But to answer your question based on my own knowledge, I would have to say that Francis would most likely be a Tank. A Tank that HATES EVERYTHING.

Zoey would be some uber-witch screaming "I was like yooouuu!", because that'd be creepy.
Bill would be a mega-smoker (he smoked at the end of the cinematic).
Louis would be a witch / hunter cross. He waits in his office until you arrive, then BAM! He jumps ya.
Francis Is a Boomer / Tank cross. He's hard to kill and spews "I hate x", instead of sick.

I've heard that they might appear in areas we can't get to, so we see them but can't do anything.SharPhoe said:

I could see them as super-super zombies, that appear once a level or something.

Louis- He'd ambush people from doors that don't open normally, and he'd have a "pills" special where steals your pills.
Francis- He's ambush people with a motorcycle, and when he spawns you hear a muffled/zombied "I hate X" (I think the game happens in new orleans, right? In which case he could enter saying "I hate New Orleans/Mardi Gras/Hurricanes")
Zoey- Super fast runner with slice and dice claws, think Prototype.
Bill- Zombie with a rocketlauncer.

Bill would replace the helicopter pilot and start having 'Nam flashbacks while he shot at you.

Louis would freeze you while he 'patches you up'.
