I don't know, it could be because of how paranoid I was that I didn't get destroyed by wild animals, but with all that I heard about it, I figured it was unavoidable.
It's the desire sensor, but tuned for combat. You expect something so it doesn't happen. You lose focus for a split second and "Wham!", insta-dead.

My biggest pet peeve was that if your horse died, you could just whistle in about 15 secs and suddenly a new horse just shows up. WTF? I avoid this by making myself have to go acquire another horse.

Other than that, it is seeming bi-polar in the story if I commit crimes.

cougars and bears made things more fun. soon as I hear the cougar screeching I know I'm in for a fight. =)
the only thing that annoyed me was when I got pushed off a cliff by a boar. >:|

... that and accidentally getting a bounty because it decides I want to drive the wagon instead of get in it :/

I just shot them to death until the damn Undead challenge of burning them with the torch.
That was just torture.

I was reminded of them because of the second season of 24, for a brief moment they mentioned Cougars
The part where Kim was being stalked by a cougar was probably the most hilarious 24 moment of all time.
On topic though?
The thing that annoyed me the most about RDR was the fact that it was hyped out of proportion.
All those fantastic reviews suckered me into buying it, but maybe it's my fault for expecting too much.
Don't get me wrong, it was a good game, but not great.

Spawning wave after wave of cougars at Tanner's Reach was the best thing about that game! Me and a friend spawned over 20 then each and took turns trying to escape from the hut / trying to get into the hut. I'm still haunted by the memory of turning round and seeing the hillside move as a swarm of cougars ran at me.

During playing the story, I came across only 1 cougar, and shot it before it could do anything, but online I saw another one that was constantly sneaking up behind and instakilling EVERYONE on the server just after spawning.

The cougar was spawn-camping. It's an NPC.

But eventually a few of us respawned at the same time and killed it as it was distracted by someone else. We were all so relieved

Oh man. That Kentucky Saddler (white horse) you tame early in the game with Bonnie? I kept that horse forever and felt attached to it. Then I'm just riding around and a cougar insta-kills it and runs off. It didn't even have the decency to fight me. That bastard cougar just killed my horse and fled.

I was legitimately sad and just stood there looking at it. It was emotional.
At least yours went out with a bang. I did the same thing, kept the horse throughout the whole of the story I'd play thus far, and then, galloping to the next mission, the horse just dropped dead in the road, and I ragdolled into the distance Team-Rocket style.

It was a sad, sad day.

One thing that drives me crazy is that sometimes when I call my horse, It makes me chase it just to get on... or spawns on a cliff right above me and falls off, one time killing me...

Also cougars were a pain, but I was annoyed the most by coyotes... They rarely killed me, but they always ganged up and slowed me down all the time...

Yes the cougars where just pure evil. The lodge out in tall trees where you get swarmed by them in multiplayer gives me nightmares.

The horses also kinda annoyed me a bit. *Whistles for horse and proceeds to chase it as it runs away*

The damned horses. Between the having to run to catch up when I whistled for them to their not being able to figure out how to jump a fence (and then jumping fences when I didn't want them to), I started naming every single one of them "Horsetard".
