I donno... I'd have many choices.
I'd like to be a goblin from the Warcraft universe, simply because I could make kickass explosives out of anything.
Or I'd like to be a Zerg cerebrate, so I could have hordes of ravenous alien beasts to destroy humanity.
Or maybe a Precursor from the Jak games. Sure i'd be a tiny orange-furred animal, but I'd also be one of the master races in the universe!
I'd also consider being a member of the Chaos Marines.
Or any kind of lycanthrope, preferably a werewolf, or a Balverine.
But if I was allowed to be any race, not restricted to games or any other media, I'd be an Ixionian, a race of my own design, who are recognized by their blue hair, and their high intellect.

Werewolf (not someone who turns into a big wolf, and not a hairy man with fangs) or some short of shifter, of the White Wolf RPG variety. If a movie example is required, Dog Soldiers.
I don't remember the name, but in the book The Reality Dysfunction, there's this race of aliens that, when they "die", float through the galaxy for all eternity, watching and analyzing everything, and then every so often they meet together and share all the information they found between them all.
I'd love to be one of them.

Oh jeez, there are so many races that would be awesome to be. I would either like to be a Vorlon or a Shadow. My geekiness knows no bounds >_<
Well, since some of us are going down the 40k route anyway, I would want to be a Chaos Space Marine, since it's like being a space marine, but you live longer and vanity and other shallow pursuits mean nothing, I would then be above them. Also, I could blow up and kill as much as I wanted.
