Crecy on the French side, in command. And I wouldn't allow all my knights to charge. I'd give strict orders not to engage before the archers, and wait until the first group of idiots ran off and got themselves killed, before casually mention to my troops that they are free to join the initial group of impetuous morons if they so wish. Any who do so get killed, leaving me with a disciplined, if smaller, army which is still likely to be larger than the English one. After that, I'd surround the much smaller English army and annihilate them, before leading an invasion into England to show these bastard invaders whose boss!
Key points:
1: My orders are the words of God.
2: Anyone who disobeys my orders, I don't kill. I let the enemy do that.
3: Make a display of what happens when knights put honour before reason.
4: Screw honourable direct charges. Surround the enemy and annihilate them.
The reasoning? Anyone who disobeys orders is a hazard to his allies, not an aid. Getting them out the way will in the long term save more lives. After that, I'm left with the more level-headed remnant, with which I can actually fight a battle. Remember people, good is not nice.
I'd also like to fight the battle of Hastings on the English side. And this time, I'd have waited for my archers before advancing. It'll be William the Bastard who gets an arrow in the eye this time. William is one my most hated historical figures, and one I would positively relish killing.
