I'd go with a Prowler from the Halo books. Not the Brute Spectres, I mean the UNSC's practically invisible stealth ships that can silently launch nuclear mines, and vanish into slipspace as soon as they detonate them. Now that i think about it, they basically serve the same purpose that submarines serve now.

The Millenium Falcon, but I'd take on a bunch of smuggling jobs and then have Xzibit pimp it out.

If he can turn a Hurst into a love machine, imagine what he could do with the Falcon....I just don't know where the fly rims would go.

With that in mind, I suppose it would have to be Discovery One from 2001: A Space Odyssey, because it's one of the only fictional spacecraft that actually conforms to real rules of spacecraft design. None of this handwaving nonsense (well, apart from stylistic elimination of the massive cooling fins that it should have, but considering how far ahead of the realism curve it is, I'll give it that one exception for free).

Things like the Death Star are clearly stupid (have you ever wondered why they had to have a whole load of exhaust ports?), and most of your choices would fight like actual naval ships, as in, inappropriately for exoatmospheric conditions.
Your entire thread bases its existence off of the assumption that we will not develop mass effect technology.

I saw Sun Crusher; Kyp Durron was a weak-willed loser. I for one would prefer a Death Star. Sure a Sun Crusher can destroy entire star systems, but some planets in them would make nice vacation spots once I've enslaved the galaxy with such a technological terror.

HMS Imperator, from the Honor Harrington series of books. Basically, it served as the flagship for the main character, and, along with a very few other ships in Eighth Fleet, it was the most advanced ship in existence, one of the lead ships of the Invictus Class of Superdreadnoughts, able to roll effectively unlimited (not really unlimited, but enough that most battles would be over before it ran out. Pod Battlecruisers did have to worry about ammunition, however) Multi Drive Missle (MDM) Pods. That's fairly standard, however. More important, they, can roll Apollo Missile Pods. Without going into the specifics, a single SD(P) (Super Dreadnought (pod)) armed with Apollo could destroy a force a good deal it's size with negligible damage because it can feed its missiles telemetry fire-control data effectively real-time. It's only when you read the entire series (this is deployed in the 11th book) that you realize how massive an advantage real time missile telemetry gives you.

TL;DR, assuming I could be resupplied and didn't let myself be blinded by overconfidence, I would be invincible in this ship.
