I'll stick with a current game since no one knows if games that aren't even out yet will be all that great.

Halo Reach, only the third FPS game ever (Unreal Tournament, Jedi Outcast), that I've honestly never gotten sick of. I'm speaking exclusively for the multiplayer end of it. I could really give a crap less about single player in a full fledged FPS game.
