I won't count WoW, so Halo 3. I would become the absolute king of everything, make the world's best maps for every map (Even *spit* Snowbound..), be the best player of every gametype, etc etc.
Assuming I couldn't get bored of the one game I have to play, that is.

Probably something with online multiplayer, which is on the PC and can be modded.

Maybe Half-Life 2 (with it's many multiplayer mods of course), or Team Fortress 2.
