Or you could go with Elder Sign. All of the theme and only a fraction of the time investment.

I love Risk, but it's hard to enjoy with just three people. Really hard.

I've played some Puerto Rico and it's a really fun game. The only problem is that sometimes it feels like it's over too quickly (not really a flaw, though) and that it didn't seem to me to have a lot of strategic depth or variation. I haven't played enough of it to really be sure, though, so take that with a grain of salt.

I really want to try both Diplomacy and Settlers of Catan some time, but I keep not having the chance.

And the more board games I play, the more I appreciate what a poor game Monopoly is. I've fallen out of love with it, I'm afraid. It drags way too much for a game so thoroughly driven by chance. At least Candyland is fast.

Oh, and has anybody here ever played Eurorails? A friend of mine has it and we've played it a lot, and I love it. You build rail lines and transport cargo all over Europe. It starts off sort of slow-paced but speeds up a lot towards the end. The only problem is that it seems to be both out of print and rather obscure.

Risk is my favourite, but I'm biased towards world domination. Monopoly city is pretty good. Articulate is a fun party game. If you like strategy there's always Axis and Allies. War on Terror: The Board Game, is good fun and actually captures the essence of how terrorism in the modern day works. Diplomacy is a tad slow but when played with 7 people is amazing. Then there's always your RP games which are always fun when played with a good bunch of friends.

one of my favorite boardgames is Dominion. The great thing about this game it can easily be played with 2 players as well with 6 (although expansions are required).

You play as a certain alien race with its on thraits and the goal is to conquer the other peoples planets. You must form alliances with other players in order to survive. Really a game witch makes you interact with the other players!

I'd also add, if you have some disposable cash, Descent. It's a good game to play if you like RPGs and the rules aren't too complex. Plus, there's enough in just the base set that you can come up with a few of your own adventures, so it's a great dungeon building tool as well.

It's a great site all about board games, with easily searchable and exhaustive lists of any sort of board game you can think of. It has reviews and forum topics for each game, and can show you where to buy.

Check out the "Thematic Games" category for some great titles.

My personal suggestion would be to echo the recommendations for Arkam Horror, Carcassone, and the Zombies!!! series of games.

A personal pick of mine if your group is into classic fantasy style adventure is a new game called Dungeon Run. It's a game with similtaneous co-op and competitive elements that's perfect for 3-4 players, but can support up to 6. It has great production quality, and is hilarious to play.

As a super board game nerd, here's your shopping list: Settlers of Catan, Game of Thrones, Tigris and Euphrates, Princes of Florence, Shadows Over Camelot, Puerto Rico, Ticket to Ride (any variation), and Goa.
