So there is a lot of Evangelion content, right? Like, lots of movies, a manga, and even a TV show, and the bloody thing is being remade or remastered or what have you every few year. Now, i want to get into this series, but I want to do it properly, as in I want to have the most up to date animation without missing out on any of the plot.

So should I watch the tv series or the movies, and if the movies, in which order should I watch them?

You should start with the original 26-episode TV series followed by End of Evangelion. If possible, you should watch the Director's Cut of episodes 21-24, as they add new scenes and more exposition.

The manga is a relatively close adaptation of the series (though it does take liberties, especially towards the end) and has a different ending. I am personally not that much of a fan of it, for spoilery reasons.

Rebuild of Evangelion (the other movies) are part re-imaginning/part reboot of the original show, changing a lot of things about it and, more importantly, doing away with much of the character development. As such, I do not recommend starting with them. (Plus, the final movie isn't even out yet).

A pity about the new movies. They looked so flashy!

Start with the original anime series (its just Neon Genesis Evangelion, get the directors cut ones though)
Then End of Evangelion (it is the ending basically, and also one of the biggest middle finger I've ever seen from the creator to fans)
Then Rebuild of Evangelion

There's another "...of Evangelion" thing but its just an hour recap of the series, waste of time. Also the manga from what I've seen and heard isn't all that worthwhile really, pretty much every time Evangelion gets mentioned its the anime.
